First you make a ferocious fire in the middle of the oven then the fire has to calm down. Then you move the fire to the side and you sweep the bottom of the pizza oven.

Then you put what ever you're making in and wait for as long as it takes. When it's ready you take it out and you eat it. Buon appetito.

That sounds like a long process. I guess taking time preparing the food is half the fun!!
I was wondering - next time you cook in the oven, could you take photos of the process you wrote about - maybe the wood in the oven (do you use wood or coal?), a roaring fire - and maybe when it has cooled down and brushed to the side (I don't know how you can move fire! - doesn't the broom catch light?) Maybe you could make a cool documentry movie on the process.

Sounds fantastic - can't wait to taste one!
Hope you will cook a pizza for me when we visit.
What is the salami like? glad there is lots of mozzerella and tomatoes--my favourite
